Understanding The Different Cuts of Beef And Steak

Look for standard industry cut names on meat labels. Here are few clues for clarification.

For example, a Kansas City steak and New York strip steak are the same thing. Until recently, asking for Kansas City steak in Kansas City or New York strip steak in New York got you that blank stare. Regardless of your location, a top loin steak is what you want.
