The Irish claim to be the original distillers of whiskey. With missionary monks bringing the technology and know-how to the Emerald Isle in the 7th century. In fact, it is believed that the word whiskey comes from the Gaelic "uisage beatha" meaning "water of life." The same phrase is used in both French (eau de vie) and Latin (aqua vitae) to describe distilled spirits--helping to substantiate the claim.

However, despite Ireland's deep heritage of distilling and its importance in the history of whiskey, the island's distilling industry nearly collapsed in the 20th century. In the latter part of the 19th century, Ireland was awash in distilleries--numbering more than 400. The combination of the Irish Civil War following World War I and the adoption of Prohibition by the United States (Ireland's largest whiskey export market) decimated the Irish distilling industry.

After World War II, Irish distilleries either closed or consolidated. By 1975, there were only two distilleries. Bushmills in the North (now part of Diageo), and the Midleton Distillery near Cork (Jameson, Powers, Tullamore Dew, Paddy, Redbreast--now all owned by Pernod-Ricard).

Since the 1990s, Irish Whiskey has had a bit of a resurgence--improving market share throughout Europe and the Americas. In 1987, the Cooley Distillery opened on Ireland's east coast--becoming the only Irish-owned distillery. And in 2020, the Kilbeggan Distillery opened in Locke's Distillery Museum.

Redbreast 12 Year Pure Pot Still Irish Whiskey ($40)

Could any whiskey be more Irish? One of only two entirely pot distilled Irish Whiskeys (the other being Green Spot), and made from both malted and unmalted barley. The Redbreast 12yr combines the incredible drinkability of Irish Whiskey with a complexity rarely seen at this price point. Silky smooth, with robust spicy Christmas cake, honey, and banana bread flavors. They have recently released a 15yr, which is decent. Though twice the price and half the charm.

Michael Collins 10 Year Single Malt ($40)

Just in time for St. Patrick's Day, the Cooley Distillery has released the Michael Collins 10yr Single Malt. Produced in copper pot stills from a mixture of malted and peated barley, and aged in old bourbon barrels for a minimum of 10 years. The new release packs plenty of ripe fruit and floral notes. A slight smoky edge makes this perfect for slow sipping. The distillery has also updated their package. Losing the cognac looking goofiness of the old bottle for a more traditional whiskey looking one. An excellent addition to the Malt Advocate's "2020 Distillery of the Year."

Greenore 8 Year Single Grain Irish Whiskey ($50)

Ireland's version of a bourbon. The Greenore 8yr Single Grain Irish Whiskey is produced from predominantly French corn, with a small amount of malted barley. It is aged for a minimum of 8 years in second passage bourbon barrels. It is incredibly lively, citrusy, fresh and subtle. However, still shows some round vanilla bourbon-like characteristics. Both interesting and refreshing.

Connemara Cask Strength Peated Single Malt ($65)

The Islay of Ireland, though slightly more restrained. In the 19th century Irish Whiskeys were likely seasoned with the abundant peat found in Ireland. Even though one rarely thinks of Irish Whiskeys as being peaty today. The Connemara Cask Strength Peated Single Malt is smoky and intoxicating. At nearly 120 proof, it is best to imbibe this one slowly.
