Gas Grilling Tips for Home Cooks

This article explains many tips for the home cook to start making great tasting food on a gas grill.

When using a gas grill their are some important steps you should take before grilling. An advantage of the gas grill is that it heats up much faster than wood fires or charcoal. This however doesn't mean that you don't need to heat it up sufficiently before grilling. Fire up your grill and leave it on full blast for at least 15 to 20 minutes. Using high heat for short periods of time is called direct grilling, and is good for applications such as seafood, steaks, chicken breasts, and most vegetables. After your grill has heated up sufficiently it is time to make sure it is clean. If you haven't cleaned the grill and while this may take longer, but take a grill brush and run it across the grates several times until the surface is clean. Having the grill on a high heat also makes cleaning much easier. Now it is time to lubricate. Roll up a paper towel or cloth and pick it up with a pair of tongs. Now get the cloth in a type of oil that you would like to use. Rub the cloth across the grates several times. Be careful as the oil will flame up, and make sure you don't soak the cloth and oil completely because it could start a fire. If you haven't done this before it may be a good idea to lubricate five or even 10 times before grilling. In the future you'll have to do this once. Good grilling means taking care of your equipment.

Now you have a hot grill that is clean and lubricated. Many people like to use heavy seasonings or marinades to flavor their meat. Sometimes this may be a good idea, but if you have a high quality meat salt and pepper may be all you need. It is a good idea to season the meat a few minutes before cooking. This will allow the seasoning to enter the meat and have a more uniform flavor. It is also a good idea to let your meat rest at room temperature for while before grilling. This will allow the meat to cook much more evenly. That should arrest between 15 minutes to an hour depending on the size of the cut. Now you can put the meat on the grill. It is a good idea to put it at a 45° angle and one quarter of the way through the cooking turn it on an opposite 45° angle. This will give you grill marks in the shapes of diamonds that you may see at many nice restaurants. You can flip the meat and do that on the other side as well. Many people have a problem with me getting to chart on the outside but raw on the inside. You want to get the char from the grilling but may not be able to cook the meat all the way on the grill. In this case pull the meat after you get nice char marks and finish it in the oven to your desired doneness.

Once the meat is done when it set again at room temperature for 5 to 10 minutes. When cooking meats you must let the proteins rest in order for the juices to go back in. The juices of the meat will redistribute, and make the meat tender and juicy while adding natural flavor. If you cut into the meat too soon the juices will just run out.

You can try many different methods on the grill with different seasonings and marinades after you get your technique down and appreciate the pure flavor of the grill. Another technique you can try as you get more advanced is putting wood chips and a foil pouch, then poking holes in it, and putting it over the flame. This woodsmoke can add an even more authentic flavor to your gas grilled food. The most important thing to remember when cooking is have fun. Learn the basics, then the possibilities are endless.
